Kansas City BBQ Stuffed Chicken Breasts

Every country and region offers food that they make better than anyone else. For the U.S., and particularly the South, BBQ is one of these unique offerings.

Though every cook uses their own seasonings, rubs, and sauces, there’s something universally special about a meal of barbequed meat and your favorite sides. Best of all, anyone can man the grill (or the oven) to create their own tasty BBQ.

For this week’s recipe, we’ve combined the flavors of smoky BBQ with the indulgence of stuffed chicken breasts. This quick and tasty meal will quickly become a family favorite. Be sure to give it a try and then let us know how you liked it in the comments!

Kansas City BBQ Stuffed Chicken Breasts

Ingredients:

4 Boneless Skinless Chicken Breasts

8 oz. Cream Cheese, softened

¼ cup Sour Cream

¼ cup Simply Savory Kansas City Rub

8 – 12 slices of Bacon (thin sliced)

1 cup Honey BBQ Sauce

Directions:

1.  Preheat the oven to 350°F.

2.  Butterfly the chicken breasts and place on a rimmed baking sheet lined with foil or parchment paper.

3.  Mix together the cream cheese, sour cream, and Kansas City Rub

4.  Scoop 2 to 3 tablespoons of the cream cheese mixture into the inside of each chicken breast.

5.  Close the chicken breasts and press down the edges.

6.  Wrap each breast with 2 to 3 pieces of bacon.

7.  Top each chicken breast with the honey BBQ sauce.

8.  Bake for 30 – 45 minutes. The cooking time depends on the size of the chicken breasts. 

9.  During the last few minutes, turn the oven to broil to help brown the bacon on the top of the chicken. Watch carefully, as the broiler works fast and can burn the chicken!

10. Remove from oven, turn over each chicken breast, and spoon the pan drippings over them.

11. Place back under the broiler to brown the bacon on the bottom of the chicken.

Chicken Parmesan

Ingredients:

1 lb. Chicken Breasts

1 jar of Marinara Sauce

3/4 Mozzarella Cheese, shredded

3 tbsp Parmesan Cheese, grated or powdered

1 pkg. Simply Savory Taste of Sicily Shake & Bake Seasoning

Olive oil, melted butter, or water

Directions:

  1. Preheat oven to 400°F
  2. Moisten the chicken breasts with melted butter, olive oil, or water.
  3. Use the Taste of Sicily Shake & Bake Seasoning to bread the moistened chicken.
  4. Place the breaded chicken on a baking sheet and bake for 10 minutes.
  5. After 10 minutes, remove the chicken from oven. Top each breast with 1/3 cup of marinara sauce and 1/4 cup of mozzarella cheese. Sprinkle 1 tbsp of parmesan cheese on top of the mozzarella.
  6. Bake the chicken until the cheese is melted and the center is no longer pink. The chicken should reach 165°F before eating.

Twice Baked Potatoes with Loaded Baked Potato Dip

Imagine, you’ve made the ultimate loaded baked potato. It’s piled high with cheese, sour cream, bacon, and chives. But, as you eat it, you can’t fully enjoy all of these flavors together. One bite will be full of sour cream, while the next is mostly potato and cheese.

Even worse, all of your toppings are gone by the time you reach the end of the potato. Talk about disappointment.

If you’ve experienced these same frustrations, you’re gonna love this week’s recipe. Twice Baked Potatoes uses all the same ingredients but mixes them together to ensure the same delicious flavor in every bite. With the additional flavor from our Loaded Baked Potato dip mix, we take this recipe to the next level. Plus, by placing the mixture back into the potato skin shell, you’ll never have too much potato at the end of your meal.

Twice Baked Potatoes

Ingredients:

4 large Baking Potatoes

1 tbsp Olive Oil

1 tbsp Kosher Salt

1 pkg. Simply Savory Loaded Baked Potato Dip Mix

1 ½ tbsp Milk

2 cups Sour Cream

1 cup Sharp Cheddar Cheese

3 slices Bacon, cooked and crumbled

¼ cup Green Onion, finely chopped

Directions:

  1. Preheat the oven to 400 degrees F. 
  2. Wash the potatoes, then pierce them with a fork. Rub the potatoes with the olive oil and kosher salt. Place the potatoes on a baking sheet with a rim. 
  3. Bake the potatoes for 45 minutes to one hour, or until done.
  4. Remove the potatoes from the oven, then reduce the oven temperature to 350 degrees F.
  5. Cut off the top one-third to one-half of each potato and set aside. When the potatoes are cool enough to handle, scoop out the inside flesh of the potatoes. Place the potato flesh in a bowl.
  6. Add the Loaded Baked Potato mix, milk and sour cream. Mix until creamy.
  7. Spoon the mixture back into the potato shells. Top each potato with shredded cheese. Return the potatoes to the oven for 15 minutes.
  8. Remove from the oven and garnish with bacon and green onion.
